Kolossi and its castle are directly connected with a number of important events which constitute various interesting folds of the agelong and stormy history of Cyprus. The most significant are the conquest of Cyprus by Richard Coeur de Lion; the presence and activities in Cyprus of the Order of the Knights of St. John of Jerusalem (hospitallers) and of the Templars; the construction and the importance of the Castle of Kolossi which undoubtedly is one of the most significant and imposing medieval monuments of Cyprus, the most important of those now existing in the free parts of the island; the sugar cane mill with a sugar refinery which were in operation, and the production of select wines and in particular of Commandaria, during the Middle Ages and the period which followed.
